Epazote....................
Most people have never heard of epazote but you've probably tasted it and asked me what it was. Epazote is the leaf in the great black beans and lemony aftertaste in an authentic salsa.
Raw, it has a resinous, medicinal field, much like the licorice flavor of anise, fennel, tarragon, or even, but stronger. Epazote's fragrance is strong, but hard to describe. It has been compared to citrus, petroleum, savory, mint and putty.
Although it is traditionally used with black beans for flavor and antiflatulent properties, it is sometimes also taste other traditional Mexican dishes as well use: It can season quesadillas and sopes (especially those with huitlacoche) are used, soups, mole de olla, tamales with cheese and chili, Chilaquiles, eggs and potatoes and enchiladas.
Also known as Mexican tea, and wormseed Stinkweed.
Epazote can normally be found fresh in Mexican supermarkets and is dried in the air.
Often the first time a person tastes epazote, they feel an instant dislike - almost a gag reflex for some. By the time most people are for a taste it. Epazote is an essential ingredient in authentic Mexican cuisine.
