The juniper berry is the female seed cones of the various species of juniper, trees that the herbs are produced. It is not a true berry but a cone with unusually fleshy and merged scales, which give it a berry appearance. Not all species of juniper berries are edible, in fact, some are toxic and not recommended consumption is.
The ripe, dark berries are usually but not exclusively used in the kitchen while gin flavored with mature but unripe green berries is.
The crushed juniper berries have an aromatic, resinous taste oftern in pies, marinades and fillings of pork, game and other wildlife present. They are also a popular spice for sauerkraut, sauce, ham and cabbage. They are also used with root vegetables, legumes and bean dishes.
