Lemon balm is a lemon-scented herb of the mint family. General information for a delicious seasoning, use it with tarragon. Try some fresh chopped leaves to lamb or fish marinades for grilling.

The taste of the leaves is the perfect complement to spicy note fruit salads. Fresh steamed vegetables alive when tossed with a chiffonade of cracked lemon and a hint of pepper.

Although lemon balm dries quickly and easy it will be not so fresh-smelling dried. It can be outside in partial shade dried brown rather quickly if there is any night moisture. When dry, store in tightly sealed containers.

When used be sure to take good care, as to crush them and tend to all the black leaves. Mix lemon balm with other herbs for homemade herb vinegar. Freeze a few leaves in ice cubes served in lemonade.
