The cultivation of lemon balm

Site: Plant in warm, moist soil in a sunny spot with afternoon shade. Good sun and moisture are necessary for the production of essential oils and good fragrance.

Propagation: Sow in spring. Divide plants or take cuttings in late spring and root in water. The seeds are to germinate slowly and are so fine that they hardly need for ever.

Growing: This vigorous plant is spread easily in your herb garden. It reaches a height of 3 feet with a spread of 2 feet. The oval, heart-shaped leaves have a little edge and a strong network of veins serrated blades, they can be up to 2 ½ inches wide. Cut back to ground level to encourage strong growth in the fall. The plant will not tolerate high humidity. Lemon balm also results in containers.

Harvesting: Pick leaves of this plant to avoid the fragile deal at any time, but gentle pressure points. The taste of the leaves is optimal as the small, white flowers begin in mid to late summer.

Culinary uses: Use fresh leaves sparingly in salads and dishes as a side dish for fish or other. Chopped leaves can be added to fish and chicken dishes and sprinkled fresh vegetables. Add the leaves to cooked dishes in the final minutes. You may also be added to summer drinks and fruit salads, and make a good substitute for lemon peel in marmalade and jelly recipes.
