The cultivation of Chicory / Chicory
Site: Chicory may be a light, preferably alkaline soil in a sunny, open area.
Propagation: Sow in early summer, and the selection of variety of chicory Chions or Braunschweig and Magdeburg varieties for "coffee " roots.
Growing: Thin or transplant to 18 inches apart. Chicory is not suitable for growing indoors. In order to grow shoots, roots dug in the fall, leaves cut to 1 inch and 1 inch trim the roots off. Bury well in sandy compost and water. Exclude light and movement in a basement or garage. Shoots are ready to eat in 3 - 4 weeks.
Harvesting: Gather leaves when young. Dig up roots in the first rung in the autumn and winter. Obtained by drying the roots and leaves.
Culinary uses: raw chicory can be chopped in salads, adding extra flavor and color. There are many different types of chicory, ranging in color. Chicory is widely used in Italy, where red-leaved chicory grown to be known Radicchio. Many types of chicory have been raised in the fall and are then either stored in a cool place, or the "rungs" of some varieties (such as "chicory") may be forced into sand in a warm, dark place. Ground chicory root used often as a coffee substitute.
