Fenugreek

Fenugreek.....................

Fenugreek is grown as a semi-arid crop worldwide.

The seeds are used as a spice in curries, pickles and chutneys. The raw seeds are bitter, so they can be gently roasted in general, the flavor before grinding (not to overheat as it turns red and bitter in taste) to develop. The seeds are very hard and difficult to grind, a mortar and pestle works best.

Seed Extract is used in imitation vanilla, caramel and rum flavors, and is the main flavoring in imitation maple syrup. Fenugreek seeds are also used in candy, baked goods, ice cream, chewing gum and soft drinks. The seeds are roasted and used as a coffee substitute.

The seeds can also be injected and used as a winter salad herb. (finished in 4 to 6 days), since the sprouts grow, Curry steps down the taste.

The young leaves are a salad herb and can be combined with other salad greens such as watercress for a delicious salad. Fresh or dried leaves used to flavor other dishes. The dried leaves (called Kasuri methi) have a bitter taste and a strong characteristic odor.
